How do you start a new Coffee and Cars?

Ok, so Coffee and Cars events are common thing around the country, and in Houston too. But they've been fairly biased towards the North, Northwest, and West sides of the Houston metroplex. Granted, that's where the majority of people who own collectable cars live, I can only deduce.

But for years now I've felt the Southwest, South, Southeast and East sides have been neglected. So how about starting a new C&C on the south side, say Pearland Town Center? I think a few years ago, someone tried but it fizzled out. Now I think it's time to get serious.

So, back to the title question. Anyone every started up a C&C before? We, the underserved in Houston, need your advice!
