New Temp Gauge and sender now seems higher reading for fans to run.

Hi all, my temperature gauge bit the dust and after troubleshooting everything and replacing the sending unit, it was definitely the gauge itself. My question is, my fans seem to come on with the new gauge reading 230deg (just above the 220 mark and turn off at around 205-210 (just below the 220 mark. What's puzzling is I could swear the old gauge would read about 190 for the fans to come on and never would reach 220 ever unless the ambient temp was near 100 and above (I live in Vegas). Now I did purchase the new sending unit on eBay which is prompting me to think the resistance value may be different causing a higher reading. I let the car warm up with the cap off and read the coolant temp in the bottle with an infrared therm and I couldn't get a reading from the water in the neck past 195 when the fans came on and down to 188 when they cycles off. So I guess my question is, what do anyone else's gauge read when the fans cycle on and off? Anyone else seem similar? Here's photos of it reading when on and off. I guess I could just order a DMC unit but would like some input from the gang before I go through changing it and maybe still getting the same reading. Thanks!!
