A quick thermostat question

I was thinking of changing the thermostat as part of a while I'm there kinda thing. The thermostat is fairly new but I have another one hanging around so why not. Now I look closer and they are slightly different. On one the closing plate is much smaller and it doesn't sit flush in the housing like the one I'm taking out. One is made in China the other looks to be UK. One is 175 degrees the other is 188. I just hate to take the best one out and put the wrong one In. The silver colored one with the jiggle pin looks more normal/appropriate.

If you put in a thermostat set to cold your engine oil can get milky because the oil does not get hot enough to burn off moisture.

You need a lot more than a thermostat to make any engine in these cars run 10F colder than usual.
