I'm pressing in new bushings there the rubber ones. My questions are how centered do they have to be? Is there some room for error and how does it effect alignment?

Center them as well as you can. Get an alignment. Think about whether more work is needed after you review the results.
The centering will directly affect your caster, which can be changed by adjusting the thickness of the adjacent washers, adjusting the thickness of the upper control arm washers, adjusting the thickness of the washers where the swaybar attaches to the LCA, or any combination of all three.
