Only a few notes here on a few selected to-do's you listed.
1. Right, there was never any coolant overflow bottle fitted originally so you can dump that addition. The overflow hose would then be replaced to extend back and down below the rear frame rail. The PO shortened it for the bottle mod.
2. Aside from the look of the wheels it's likely that the rear width and/or the rear offset (hub-to-centerline of wheel) does not match the original specs. Those tires seem not to extend to the outer edges of the wheel wells back there. Correct wheels will fix this and you say that's on your list anyway.
3. Getting a photo of the TABs will require removing them. You probably knew that. As a starting point you can get the car up and then spin the bolt and look for any wobble in the nut on the other end. Wobble = bent bolt. Even if it's not wobbling get a look at each one of them anyway.

Another Giugiaro masterpiece prior to his Flying Wedge (Lotus Esprit & DeLorean) period. The rear buttresses above the quarter panels look familiar to us even if he didn't use glass beneath them that time.
If not mistaken there are a few powertrain similarities between your two cars. The V-6 in the Merak is, like the PRV motor in a D, a 90-degree wonder derived from an earlier V-8 plan. Also just under 3 liters of displacement and all-aluminum? It had a fair bit more power than the PRV but not nearly the durability?
That is quite a pair of classics. Have fun.
The yellow one is in fact a Maserati Merak. I didn't look at it too much. Wasn't really what I was there for. The DeLorean was much cooler anyways
