I think this clip is part of a larger documentary from universal on movie magic. The gimbal car they're showing was from back in the 90's when there was a SFX show at universal studios CA that let fans experience what it was like to be in a movie. They'd chose someone from the audience to come up and go for a ride in the gimbal car while they filmed it with the rear projection, rain, lights, etc. There are a few different videos of that on Youtube somewhere also if you're interested.
The SFX show also displayed the original fiberglass mockup DeLorean and miniatures they used for filming the external shots of the car flying.
