If the interior you have is in good shape you can do it by redying the plastic parts and leather. The carpeting can also be redyed but is harder to do.

My carpet should be replaced. It's kinda dingy and worn. My stuff is in great shape but dying sounds like a headache

Dying is a lot easier than tracking down all the parts in good condition. Right kneepads are no longer available, except as recovered.

For the money you would spend replacing everything, you can pay a pro to re-dye the interior many times over if headache is your biggest worry.

I had a gray and black interior and changed mine to all black -- headliners, carpets, everything. DMC carpet kit fits really well and can be installed yourself... with a bit of work. The carpet on the bottom of the doors I had done though.

Shoot me a message of the parts you want as 1045 that I'm parting was a black interior car and I've got most of the parts still, full carpet set included.
