I have been looking to find details on where the controls are for the cruise control option which appears to have been fitted to some automatic cars such as mine. It is referenced in the videos on auto coolant bleeding on the tutorials but not seen any other reference. Image attached.

There was no factory cruise control option for DeLoreans as you may know. So you're not missing anything in the factory documents.
In the early years many owners installed aftermarket cruise control systems from various suppliers. Any decent auto stereo shop (remember those?) could do it. Estimating this was added to <5% of Deloreans. I never noticed whether CC was fitted mostly to automatics vs manual cars as you suggest.
Most of the systems I saw back then had their control switch(es) attached to the turn signal stalk with the control wires running from there into the steering column shroud. Look for scratches in the black paint on the stalk to see if there might have been a wired CC switch clamped on to it in the past.
Most of the CC systems were removed at some point since then. I've often seen cars like yours where the interior shows no controls but the abandoned vacuum servo, secondary throttle cable and some wires were left in the engine bay. Expect to find odd wires and fuses somewhere in the car, too.

Of the few that had an aftermarket system installed, most probably aren't functional. Like most aftermarket stuff such as burglar alarms, radar detectors, CB radios, the first thing you do is try to dissect it out. Without documentation or parts, once it malfunctions, you can't fix it.

No DeLorean left the factory with cruise control. If a car has it, it was an aftermarket addition. As such, the controls, electronics, wiring, etc could be anywhere, depending on who made the kit and who installed it.

Saying that cruise won't exist for manual cars is strange. I know of at least 4 manual cars with cc, including mine.
