Haven't I heard a lot of horror stories about disassembling that unit and that it never goes back together again without leaks?

That's if you remove the plunger from the center of the FD. It wasn't clear what OP is planning to do but it's no problem to seperate the FD from mixture unit, or open the mixture unit to work on the throttle bodies, metering flap, etc.

Removing the plunger from the fuel distributor is no problem as long as you don't damage the plunger. The problem is when you separate the halves of the fuel distributor.

Officially the mixture unit is a non-repairable part. Practically though, it can be disassembled, cleaned and reassembled. There is a metal gasket which should be replaced but it can be reused by smearing some silicone gasket sealer on both sides. Use it sparingly so you do not plug up any of the small holes. The plunger is a highly machined, finely fitted part so you can't use anything too aggressive in it. Once you get it out all you need to do is wipe it and the bore with Acetone. It should slide smoothly and not have to be forced. Do not drop, nick, or otherwise damage the surface of the plunger. You should not have to disassemble the Primary Pressure Regulator.

Dave your confusing the mixture unit with the distributor.

Fuel distributor rebuids are best left for the professionals, and thats coming from someone who does EVERYTHING myself. But there is certainly no issue in removing the distributor, from the mixture unit, to free a stuck piston, which is likely after years of sitting. See here...
