On a cold start-up the idle is right at 750, which is where it should be as I understand it. After driving for a bit the idle tends to be over 1000. Should a hot idle speed be different from a cold one?

No. Idle speed should stay at 775 RPM always. You may just have to back out your curb idle screw a little. That would be the lower screw. I had the same problem even with the curb idle fully backed out. My problem was the deceleration springs were shot.
