How involved/difficult would installing a new complete set of SS fuel lines be? Are there any DeLorean-specific need-to-knows?
I'm wondering if it's something I could do myself, be comfortable with having my mechanic do, or if it should go to a DeLorean specialist.....

Piece of cake - just do one at a time or tag them to ensure you put the right ones in the right place, get the right torque, etc.

Drive on over to kitchener and i will help you out.
Make sure you get a new set of copper washers.

get the right torque
+1 - It is really easy to over tighten these and break off the banjo bolts. I broke one and had to order a replacement from DMCMW, the shipping cost more than the bolt but I needed it ASAP. I think the spec is for only 4 foot pounds, very low torque.
Aside from that, pretty easy job.

This was the first job I attempted as a new DeLorean owner and it wasn't very difficult at all. As others have noted just be extra careful when torquing the hollow banjo bolts and you should be fine.
